This spicy salmon recipe served with creamy avocado, extra thinly sliced jalapeños, plenty of cilantro, and doused in a tangy ponzu sauce is one of my favorite meals to keep on rotation. It’s so fresh and flavorful, plus I feel healthy eating it!!!
Ingredients (feeds 2)
- 2 salmon fillets
- 1 jalapeño, thinly sliced
- 1 bunch fresh cilantro, chopped
- 2 avocados, sliced
- 2 limes, juiced
- 1/4 cup soy sauce
- 1/4 cup teriyaki sauce
Method
- On a skillet over medium heat, cook the salmon fillets for about 5-7 minutes per side (I like to sear the sides as well to get everything crispy), until the fish is cooked through and flakes easily with a fork.
- While the salmon is cooking, slice the jalapeño into very thin slices and chop the cilantro for garnishing.
- Prepare the ponzu sauce. In a small bowl, mix together the juice of two limes, soy sauce, and teriyaki sauce. Stir to combine.
- Just before serving, slice the avocados.
- The assemble: move each salmon fillet to a plate with the sliced avocado. Top with jalapeño, ponzu sauce, and cilantro.
Enjoy!!!
