This pear and arugula salad topped with creamy burrata, crispy fried capers and juicy grilled chicken is just the perfect summer meal to serve for lunch, dinner or even as a side salad. I’m pretty sure adding burrata and fried capers to anything makes it impossible to dislike.
Ingredients:
- 1 box/bag arugula
- 1 pear, thinly sliced
- 1/2 shallot, thinly sliced
- 1-2 burrata
- Handful (about 1/2 cup) capers
- 1 chicken breast (or 2 depending on your appetite)
- Juice from 1/2 lemon
- 1 cup olive oil
- 2 tbsp honey
- Red pepper flakes
Method:
- Season chicken breasts with salt, pepper and paprika. Cook on the stove or the grill.
- While the chicken is cooking, make the dressing by combining: olive oil, honey, juice from lemon, red pepper flakes (+ some caper juice if you please).
- In a skillet, fry the capers until crispy (a few minutes). Set aside.
- In a large bowl, combine arugula, sliced pear, sliced shallot. Mix and top with burrata, capers and sliced chicken breast.
- Apply dressing when serving.
