Pear and Arugula Salad

This pear and arugula salad topped with creamy burrata, crispy fried capers and juicy grilled chicken is just the perfect summer meal to serve for lunch, dinner or even as a side salad. I’m pretty sure adding burrata and fried capers to anything makes it impossible to dislike.

Ingredients:

  • 1 box/bag arugula
  • 1 pear, thinly sliced
  • 1/2 shallot, thinly sliced
  • 1-2 burrata
  • Handful (about 1/2 cup) capers
  • 1 chicken breast (or 2 depending on your appetite)
  • Juice from 1/2 lemon
  • 1 cup olive oil
  • 2 tbsp honey
  • Red pepper flakes

Method:

  1. Season chicken breasts with salt, pepper and paprika. Cook on the stove or the grill.
  2. While the chicken is cooking, make the dressing by combining: olive oil, honey, juice from lemon, red pepper flakes (+ some caper juice if you please).
  3. In a skillet, fry the capers until crispy (a few minutes). Set aside.
  4. In a large bowl, combine arugula, sliced pear, sliced shallot. Mix and top with burrata, capers and sliced chicken breast.
  5. Apply dressing when serving.
